My Mom doesn’t cook a lot of fish. My Dad isn’t a fan so it’s not something she usually puts on the menu. Knowing that Z and I were coming for a visit it was the perfect excuse for her to pick some up at the store.
Since she doesn’t buy it often, she left the preparation up to us. I had recently pinned a recipe that I knew would be perfect for the occasion…
The recipe comes from the blog, Fitness and Feta. You can click on over for the exact recipe, but here’s what was involved. Super simple, super tasty and everything can be adjusted according to your tastes.
To prepare salmon we simply brushed with olive oil and seasoned with salt and pepper before tossing on the grill.
To make the salsa:
STEP 1: Chop up 1/2 container of strawberries. Place in bowl.
STEP 2: Slice up 1 roasted red pepper. Mix in with strawberries (it’s a whole lot of red going on!).
STEP 3: Add in lime juice and fresh cilantro (got to add in some other colors in there!), with a sprinkle of salt and pepper.
STEP 4: Put in fridge to chill while salmon finishes cooking. Ideally this would be best made ahead of time, allowing the flavors to blend together.
Fresh. Sweet. Wonderful.
I’m now obsessed with roasted red peppers. After making this recipe I have started adding them to every sandwich I have for lunch. They add so much flavor!
Then there’s the fresh cilantro…another recent obsession of mine. You really can’t go wrong with that either.
This meal was perfect to enjoy on the back porch on a warm spring evening.
