Making pizza on the grill is one of my new favorite meals. Especially during the summer where turning on the oven is the last thing you want to do, it makes for a great way to enjoy this delicious Italian staple….AND it takes far less time to cook.

Z and I have tried a few different varieties so far including bbq chicken and thai tofu with peanut sauce. All have been fantastic. Grilling the pizza leaves the outside of the crust nice and crisp while the inside remains doughy…I love that!

Our most recent pizza creation: pear, walnut and gorgonzola (another Pinterest find!).

There are many different variations out there, but here’s what went in to ours:

INGREDIENTS:
1 bag whole wheat pizza dough

¾ cup mozzarella cheese

¼ cup gorgonzola (probably ended up being slightly less)

1 bosc pear

Walnuts (a nice sprinkling)

1 TBSP Olive oil

Balsamic vinegar

Pepper

DIRECTIONS:

First spread out your dough into whatever shape you’d like. Circle? Square? Octagon?  Whatever your heart desires. We picked up a grilling tray at the store this past week which made the pizza process much easier.

Place the dough on the grill until the dough starts to bubble (no more than 5min). *Be sure to use cooking/grill spray otherwise that dough holds on for dear life.*

While dough is grilling, cut pear lengthwise into thin slices. Saute with a bit of balsamic vinegar and a sprinkle of black pepper over low to medium heat for 3-5 minutes. This will give the pear a delicious enhanced flavor.

Once dough has started to bubble, flip and apply toppings.

Brush dough with olive oil. Next add mozzarella and pears. Finally sprinkle with gorgonzola and walnuts (as little or as much as you’d like).

Then back on the grill it goes!

In a mere 3-5min you’ve got yourself pizza!

Add a nice side salad and you’ve got yourself a yummy summer dinner. Can’t wait to find more fun varieties to try!
